Vegetarian version of the most delicious mutton gilauti kebab
•Red kidney beans (rajma),boiled and mashed Soaked – 1 cup
•Cloves – 5
•Cinnamon – 4 inch sticks
•Black cardamom – 1
•Caraway seeds (shahi jeera) – 1/4 teaspoon
•Green cardamoms – 2
•Poppy seeds (khuskhus/posto) – 1/2 teaspoon
•Charoli/chironji – 1 teaspoon
•Cashewnuts – 8
•Red chilli powder – 1/2 teaspoon
•Salt to taste
•Oil to shallow fry
•Yogurt as required
•Green chutney as required
Dry roast cloves, cinnamon, black cardamom, caraway seeds, green cardamoms and poppy seeds in a non-stick pan till fragrant. Add charoli and cashewnuts and roast till they brown. Transfer into a mixer jar, cool and grind to a powder. Grind cooked rajma in a mixer jar.
Mix together rajma, red chilli powder, salt and ground masala.Divide the mixture into equal portions with damp hands and shape into tikkis.
Heat oil in a non-stick pan and shallow fry the tikkis, turning sides once, till both sides are equally done. Serve hot with yogurt and green chutney.
For the green chutney:
1 cup coriander leaves
1/ 4 cup mint leaves
1/2 inch ginger
1 green chili
For the potato filling:
2 cup mashed potatoes
1/2 onion – chopped finely
1/2 tomato – chopped finely
1 small green chilly – chopped finely
1/2 sprig of curry leaves – optional
1/2 tsp cumin seeds
1/4 tsp mustard seeds
a few chopped coriander leaves
1/4 tsp turmeric powder
a pinch of asafoetida
1/4 tsp red chili powder (optional)
8 slices of bread – brown or white
a few thin round slices of onions, tomatoes, capsicum
Amul Butter or any other brand of Butter
Sandwich Masala or Chaat Masala
Grind the ingredients for the green chutney with little water to a smooth paste in a mixer grinder.
In a pan, heat some oil.
Add mustard seeds. Let them splutter.
Add cumin seeds. Then add onions. Fry the onions till transparent.
Now add the tomatoes.
Fry the tomatoes till they become soft and are cooked.
Add the chopped green chilli.
Add the all the spice powders mentioned above.
Mix them well.
Now add the mashed potatoes.
Add salt. Mix the stuffing really well.
Keep on stirring on a low flame so that the mixture does not stick to the pan.
Cook for 5 minutes.
Let the mixture cool before you start using it for the sandwich.
For making the sandwiches
Trim the edges of the bread
Apply amul butter evenly on the bread.
Now apply the green chutney on the bread.
Take the potato mixture and apply it on this bread. Keep one or two onion, tomato and capsicum rings on this mixture. Sprinkle some sandwich masala or chat masala.
Now cover this potato laden bread with another slice of bread, to which both butter and chutney has been applied. In a sandwich toaster or grill, toast or grill the sandwich till browned from both sides.
Remove and apply some butter on top of the sandwich. The butter melts. Ah….. melted butter on hot sandwich. Its crisp from outside and spicy and soft from inside. Serve the sandwich hot with the green chutney and tomato ketchup.
•Brown bread – 8 slices
•Cottage cheese (paneer) (100 grams) – 4 slices
•Onion ,cut into round slices – 1 medium
•Cucumber,cut into round slices – 1 medium
•Tomatoes,cut into round slices – 2 medium
•Green capsicum,cut into thin strips – 1 medium
•Salt to taste
•Chaat masala – 1 teaspoon
•Cheese (optional) – 4
•Green mint and coriander chutney – 4 tablespoons
•Tomato ketchup – 4 tablespoons
Arrange paneer, onion, cucumber, tomato, capsicum slices on four bread slices.
Sprinkle salt and chaat masala over them.
Top with a cheese slice.
Apply one tablespoon green chutney on each of the remaining four slices.
Top it with one tablespoon of tomato ketchup.
Place these slices over the cheese slices with the chutnied side facing down.
Press lightly. Place the sandwich on the grill and grill till both sides are golden and have the grill marks.
Whisk 2 wholesome pulpy bananas into the mixer and add 2 heaped tsp of oats.
After whisking in, add a full glass of milk or yogurt with a dash of honey or a tbsp of your favorite jam.
Whip up the smoothie for about a minute in mixer grinder and voila!
All you get is a creamy smoothie, laden with the goodness of milk, oats and fresh fruits.
You can also add a handful of nuts for that extra energy spike.
